Tuna, Bean & Haloumi Salad


500g spinach, trimmed
250g haloumi cheese, cut lengthways into 1cm slices
1/2 packet of Spice & all things nice Three Bean Salad Mix. (Cook as per instructions on the label).
2 tins of tuna - drained, flaked
250g baby tomatoes, halved


1/2 cup (140g) greek-style yoghurt
1/2 teaspoon finely grated lemon rind
1 teaspoon djion mustard
1/4 cup (60ml) lemon juice


Boil steam or microwave spinach until wilted. Drain and chop coarsely. Cook cheese in heated oiled frying pan until browned lightly. Combine spinach, beans, tuna and tomato in a large bowl. Divide salad among serving bowls; top with haloumi cheese. Combine dressing ingredients and drizzle over salad.
